For the at-home cook willing to give baking a shot in their own kitchen this holiday season, Romano is also releasing a few simple tips to making the perfect pie.

  • For easier entertaining, make the dough at least a day in advance or up to two weeks stored well-wrapped in the freezer.
  • Choose a filling based on the seasons’ best fruit. The filling may be made in advance as well.
  • Pies bake best from a chilled temperature so that the water content in the butter has a chance to create steam for a crunchy texture.
  • In order to cleanly cut slices from a pie, bake several hours before company is due to arrive.
