Wynn Las Vegas has appointed Timothy Henderson as Executive Chef of Tableau, the fine dining establishment located within the luxurious Forbes Travel Guide Five-Star Wynn Tower Suites (Photo credit: Anthony Mair).
Offering stunning views of the Wynn Tower Suites pool area, the garden atrium is the ideal location for a truly memorable dining experience. Since taking the helm at Tableau, Henderson has customized the menu by using the finest, market fresh ingredients to create an elegant twist to classic breakfast and lunch favorites.
“My goal is to create a menu that fits the ambiance of this intimate space. Tableau has the perfect balance of sophistication and style, while maintaining the warmth that Wynn is known for,” said Henderson. “For breakfast, I have created a vegetable frittata topped with a squash blossom salad. The filling is summer squash and cherry tomatoes, and is as close to a garden breakfast as you can get. The salad is a blend of micro herbs along with delicate petals of sweet summer squash blossoms. Our frittatas are made with a custard-like base filled with a bountiful array of fresh vegetables.”
In addition to the seasonal dining offerings, new menu items include Maine lobster salad served with English peas, Boston bibb lettuce, and quail eggs; and Atlantic stripe bass served over pea tendrils, dandelion greens, wild mushrooms, and roasted fingerling potatoes.
Henderson is a Nevada native and attended the California Culinary Academy in San Francisco, Calif. Upon graduation, Henderson worked for several esteemed chefs such as Michael Mina, Andrew Budnjy, Larry Forgione, Mark LoRusso, and Stephen Hopcraft. Henderson’s culinary background includes Michael Mina’s Pisces in Burlingame and Arcadia in San Jose; Tableau under Mark LoRusso, where he was promoted from grill cook to executive sous chef; STK in Las Vegas; Old Homestead Steak at Caesars Palace; and Andrea’s at Encore at Wynn Las Vegas.
