Chefs José Andrés and Garrison Price are hosting China Poblano’s “Viva Mexico” celebration (now through October 13) at The Cosmopolitan of Las Vegas.
Honoring Grito de Dolores, and the culinary influences of the China Poblano menu and concept, “Viva Mexico” will offer a tasting menu and selection of daily specials featuring traditional Mexican dishes, including the classic Chile en Nogada, alongside favorites such as Costilla de Puerco con Mole Amarillo, Tamal Yucateco Colado, Menudo, and Café de Olla.
China Poblano will spotlight a seasonal cocktail tasting menu and debut a variety of bespoke tequila drinks, such as the Casa de las Luciernagas with tequila blanco, pisco, shishito honey, and lime, and the El Jarocho with tequila anejo, ancho liquor, and cocchi rosa; diners will be able to take the party on the road with China Poblano’s signature Margarita Shaker ($32) to commemorate their “Viva Mexico” experience.
