The Palazzo Las Vegas, the newest destination resort on the Las Vegas Strip, is proud to announce that Celebrity Chef and Multiple James Beard Award Winner Charlie Trotter has won one Michelin star for his cuisine at Restaurant Charlie.
The Michelin rating is a prestigious honor due to its rigorous selection process that is applied independently and consistently around the world. It has become an international benchmark in gourmet dining and the selection is made by anonymous, professional inspectors who are Michelin employees. Their rating is synonymous with quality as only the best establishments in each comfort and price category is selected.

Restaurant Charlie is unique as it offers three dining experiences within one space: Main Dining Room, Bar Charlie, and The Kitchen Sky Loft. The spacious main dining room, with 20 foot tall ceilings and a walk-thorough wine cellar offers exemplary dishes such as Slow Poached Tasmanian Ocean Trout with Savoy Cabbage and Trout Roe-Shiso Vinaigrette, Poached Maine Lobster in Yellow Curry with Lotus Root, and Steamed Casco Bat Cod with Lemon Curd. Bar Charlie offers another option as guests enter a “restaurant within a restaurant.” This intimate, counter only seating area offers guests the ultimate expression of East meets West as they enjoy a seven or fourteen course menu featuring the most delicate sushi, sashimi, and other seafood creations prepared right before their eyes. The final experience, The Kitchen Sky Loft, offers guests a birds eye view of the symphony of activity in Chef Trotter’s kitchen. The “chef’s kitchen table” accommodates up to eight guests and offers a uniquely personal Charlie Trotter experience.
Guests may also enjoy The Drinks Bar where Chef Trotter uses the freshest, most pure ingredients in season to provide extraordinary cocktails. Two menu styles are available. The Vintage pre-prohibition classics offer cocktails from the mid 1800’s such as the Sazarac, known as America’s first cocktail and New Style Manhattan known for its Bing Cherry ice cube. The Modern cocktails are the second offering with choices such as the Ruby Fresh with fresh ruby grapefruit juice and the Yucatan Flip made from Hurradurra Silver Tequila and fresh squeezed orange juice.
