The countdown to 2017 is on at La Cave Wine & Food Hideaway, located inside Wynn Las Vegas, with preparations underway for an elegant five-course New Year’s Eve dinner and decadent New Year’s Day butler-style brunch (Pictured: Brunch Pancakes with Berry Compote – Photo credit: Las Cave).
Prepared by Executive Chef William DeMarco with ingredients from the ocean, farm and sea, the menu starts off with Ahi tuna crudo, served with pickled vegetables, Osetra caviar and yuzu oil. The second course is a soy-charred veal short-rib with onion puree and baby carrots. The third course, a butter-poached sea bass, will be served with baby zucchini and poached egg. The fourth course is Australian Wagyu skirt steak with miso hollandaise and fresh winter truffles. The meal will conclude on a sweet note with a selection of desserts. The holiday menu is priced at $150 per person, with a sommelier’s select wine pairing available for an additional $75.
The following morning, La Cave will honor New Year’s Day with a special butler-style brunch. Available from 10:30 a.m. to 2:30 p.m., La Cave’s tray-passed brunch offerings include more than a dozen selections, including veal short rib hash, pancakes served with a house-made berry compote, flavorful mushroom grits, signature Angus mini burgers and more. The brunch is priced at $48 for adults and $28 for children. Bottomless sparkling wine, Bloody Marys and build-your-own mojitos are also served at brunch, each priced at $20.
