Carson Kitchen Debuts New Winter Menu Reflecting the Flavors of the Season
Downtown Las Vegas’ Carson Kitchen has unveiled its winter menu featuring seasonal twists on signature entrees and original creations crafted by Executive Chef Scott Simon and his team. 

“We take great pride in using seasonal ingredients in ways you won’t find anywhere else,” said Cory Harwell, Managing Partner of Carson Kitchen. “I think our guests have come to expect our unique way of interpreting what comfort food really is and our team here has come up with some fantastic new menu items.”

Known for its playful interpretations on American comfort food, Carson Kitchen’s winter menu features an all-new Cheddar Crab Fondue complete with jalapeño and tarragon, Sausage and Broccoli Rabe flatbread with spinach pistou and pickled onion, and the Hot Italian with cured meats, an olive and tomato tapenade, and a side of signature spicy tater tots. Also on the menu: Goat Goulash served with conchiglie, goat cheese and fines herbs, Thai Eggplant prepared with coconut aminos, roasted peanut and lime, and a Brussels Sprout Caesar with black kale and bacon lardon.

Meat and fish continue to be showcased throughout the menu with entrees such as the Pork Tenderloin with a pretzel crust and sage-infused maple drizzle, a pomegranate and bourbon glazed Salmon, and Chicken Thighs served with mushroom marsuvio. For something sweet, guests can enjoy the all-new Cran-Apple Turnover topped with cardamom pecan and an infused brandy drizzle.

In addition to the diverse range of new delectable bites, guests can still enjoy Carson Kitchen staples such as the Crispy Chicken SkinsVeal Meatballs and Baked Mac & Cheese, as well as a full menu of craft beer, wine and signature cocktails including the Don’t Re-Po My RepoCommunication Breakdown and the Towns End. Carson Kitchen’s new winter menu is available through mid-March, when it will change to be reflective of the spring season.
