“The Downtown Los Angeles culinary scene is thriving and we’re elated to welcome Sixth+Mill to our inspired collection of the best dining offerings at The Venetian Resort Las Vegas,” said Patrick Lang, Vice President of Restaurant and Nightlife Development for Las Vegas Sands. “The addition of Sixth+Mill allows us to stay true to the Venetian’s Italian roots and solidify us as a leader of what’s next in the Las Vegas culinary scene.”
Tomato based concepts and dishes inspired by the Southern region of Italy are at the heart of Sixth+Mill’s menu and range from classic, red and white hand-crafted pizzas, hard durum wheat pastas and a selection of easy sharable plates such as fritture and salads.
Signature dishes include Sorrentina, hand-made gnocchi with tomato, burrata and Reggiano Parmigiano cheese and Salsiccia, sausage with rapini and chili jam. Neapolitan pizzas will be fired in two Mario Acunto pizza ovens and include classic margherita pizza made with fior di latte, Apulian extra virgin olive oil and crushed dried oregano. The vince is a popular favorite at Sixth+Mill’s Los Angeles location and will be offered in Las Vegas, a white pizza composed of fior di latte, burrata, mortadella and pistachio. Guests will also have the opportunity to create their own pizza with toppings straight from Italy, including Calabrian chilies, Baresane olives and spicy Sicilian anchovies.
Imported ingredients including cheeses from Naples, tomatoes from Italy and California, olive oil from the mountainous terrain of Molise, and cured meats coupled with local produce will enhance the authenticity and freshness of each dish.
The beverage program will feature an extensive draft beer and sparkling wine menu, available by the glass.
