“James Trees and I have been friends and collaborators for a long time” says Kalman of Ada’s Chef/Owner. “So I jumped at the chance to come cook at his new spot. I love the Las Vegas food scene right now, so it’s fun to come participate in it!”
Los Angeles-based Chef Bruce Kalman’s Northern Italian cooking style utilizes the abundant and diverse produce of the West Coast to create exquisitely balanced soul-warming flavors. Best known as original Co-owner and opening Executive Chef of the acclaimed UNION in Pasadena, CA, he is currently the Chef/Co-owner of Knead & Co. Pasta Bar + Market in L.A.’s Grand Central Market as well as chef partner for California’s Sunkist Growers, helping spotlight the brand’s local and family-owned citrus growers. He also is the founder of BK Brinery, an artisanal pickle company, currently supplying several prominent restaurants, with retail planned in the near future. Most recently, he was tapped to curate all culinary for Willie Nelson’s Luck Reunion festival. In addition to supporting local growers, Chef Bruce is known for his passion for whole animal butchery and sustainability wherever possible.
A native of Northern New Jersey, Chef Bruce rose through the ranks in a variety of eateries near his hometown of Paramus before relocating to Chicago for several Executive Chef positions at restaurants including Okno, Green Dolphin, and Coco Pazzo. In 2011, Kalman landed in Los Angeles to help launch Santa Monica’s Misfit, later joining West Hollywood’s The Churchill before founding Union.
Kalman has made several notable food tv appearances, including “Chopped,” “Beat Bobby Flay” and “Knife Fight,” savoring victory on all three shows. He is also often recognized as a cheftestant on “Top Chef” season 15, where he finished in the top 5. Among other accolades, Chef Kalman was nominated for the coveted “Rising Star Chef” award from the James Beard Foundation.
When not cooking, Bruce enjoys spending time with his wife and son, assisting rocker Dave Grohl with his Backyard BBQ project, and performing as frontman for the chef cover band Foie Grock with fellow chef Duff Goldman.
