From pop-up restaurant to Summerlin resident in just under two months, Osteria Fiorella is officially here to stay at Red Rock Casino. Celebrated James Beard award-winning chef Marc Vetri’s overnight sensation, serving rustic Italian, joins the acclaimed culinary collection at the Station Casinos popular west side resort. The announcement coincides with the installation of the exterior signage of the restaurant’s entrances solidifying Fiorella’s mark at Red Rock.
“I am incredibly proud of the team for what we have accomplished in such a short period of time and thankful to Red Rock Resort and Station Casinos for creating a permanent home for Osteria Fiorella – we’re going to keep bringing the best rustic Italian food to Summerlin and we’re just getting started,” said Marc Vetri, Chef and Owner of Osteria Fiorella.

In just under two months, chef and the team, led by General Manager Matteo Giacomazzi and Executive Chef Joel Myers and Pastry Chef Ashley Acosta, have presented Vegas diners with a robust, casual menu featuring Antipasti and Salads, Pizzas made in a wood burning oven, daily hand-made pastas, meat and fish cooked to perfection in a Josper charcoal oven and of course a selection of authentic desserts. Guests have also enjoyed Fiorella’s exceptional beverage program including its specialty cocktails and variations of the summertime spritz, curated beer list and an exceptional wine list that rivals any restaurant in the valley.
