Restaurateur Tony Nguyen announces the opening of Saffron, The Vegetarian Eatery, with renowned Las Vegas chef, and Hell’s Kitchen Alum, Louross Edralin at the helm. The restaurant is poised to deliver unique vegetarian fusion to nourish both bodies and souls in the Las Vegas Valley, offering a cozy, elegant, and calming atmosphere. Located at 3545 S. Decatur Blvd, Las Vegas, NV in Chinatown. Now open to the public for dinner service Wednesdays through Sundays from 5:00 PM – 11:00 PM.

Saffron, The Vegetarian Eatery, takes inspiration from the ‘complex simplicity of life and nature’ as is so widely practiced in East Asian culture. Practicing eco-friendly and health-centered principles for responsible sourcing of ingredients, Saffron’s offerings are geared towards delivering an approachable and positive perspective towards vegetarianism. The food will highlight rich, delectable flavors and aromas, capturing the true gifts of nature in an all-encompassing mind, body, and spirit-centered dining experience.

Their menu features a fusion of traditional East Asian cuisine and approachable western vegetarian, with favorites such as Fern root Singapore Noodles, as well as traditional Claypot Rice and Exotic Mushroom Tempura. Fresh vegetarian curries bursting with flavor and vegan cheesecake bring a comfortable familiarity to Saffron’s offerings. Menu changes will occur often, keeping in step with each season’s offerings of produce and fresh ingredients. Additionally, their mushrooms are sourced from local Las Vegas urban mushroom farm, Sundown Mushrooms.

They will also offer a unique beverage program from local distributor, ALT. Imports, highlighting Asian beer and sake varieties, such as Jasmine Tea Ale, and tantalizing Yuzu Sake, natural wines, spirits, and creatively inspired cocktails with a full bar to compliment the exciting and unique flavors of their menu.

The atmosphere of Saffron embraces a harmonious union of serenity and stability; the 90-seat space with private dining area features a beautiful, gentle pond flowing through a hand-made basin as the centerpiece of the room, crowned with a statue crafted in Vietnam exclusively for the restaurant. With original, one-of-a-kind art adorning the walls, and East Asian wood carved accents adding peaceful depth and contrast to the room, guests are transported to tranquility with the sights, sounds, smells, and tastes of the immersive design and spirit of the vegetarian concept.
