At his namesake restaurant, award-winning chef Alex Stratta will offer a five-course prix fixe menu of flavorful, refined dishes such as oyster and tapioca gratin with caviar; foie gras with sweet potato hash, caramelized onions, pancetta & butternut squash sauce; turbot with abalone, and wagyu beef with white truffles. Pastry chef Jenifer Fournier will present a festive dessert finale: “Ten ‘til Midnight—A Chocolate Resolution.” $450pp. Reservations from 9:00pm.
BARTOLOTTA Ristorante di Mare
Revelers can ring in the new year with award-winning chef Paul Bartolotta’s authentic Mediterranean cuisine served in four-course, five-course and six-course prix fixe menus. Music and dancing can be enjoyed along with Bartolotta’s various seafood dishes, homemade pastas and entrees.

Chef Mark LoRusso’s creative steak and seafood cuisine will be presented in a prix fixe menu comprised of Maine lobster salad with winter citrus and curry vinaigrette; ricotta agnolotti with white truffles and parsnips; phyllo-crusted Dover sole with crab brandade, and filet of beef Rossini with potato cake, spinach and black truffles. A tasting of whimsical, childhood-inspired desserts from pastry chef Sara Steele will provide a sweet close to the meal. $250pp. Reservations from 9:00pm.
At the steakhouse on The Green, chef Carlos Guia will offer a prix fixe menu of celebratory dishes such as Russian and California estate Osetra caviar with potato crisps and smoked salmon; King crab and lobster ceviche; pheasant, foie gras and black truffle ‘pot pie’; pan roasted sea bass and shrimp, as well as filet mignon with porcini mushroom crust. $250pp. Reservations from 9:00pm.
At Wynn’s new dining destination, chef David Walzog will prepare a prix-fixe menu of imaginative takes on classic American dishes. The festive meal will begin with smoked salmon and confit potato Napoleon with Spanish caviar, followed by seared scallops with celery root puree and foie gras jus; wild mushroom risotto with white truffles, and dry-aged prime rib with potato pave. Pastry chef Kimberly Valdez’s creative desserts are perfect for ringing in the new year. $325pp. Reservations from 9:00pm.
Guests of Okada can celebrate New Year’s Eve with chef Masa Ishizawa’s fine Japanese cuisine served in a modern Zen oasis. A five-course prix fixe menu will include a toro tuna, kampachi and salmon sashimi platter; foie gras and Japanese eggplant salad; Maine lobster with sesame sauce, and tenderloin of Kobe beef with black truffle sauce. The restaurant will also offer a multi-course teppan yaki dining experience.

Chef Theo Schoenegger will offer a meal worthy of the Sinatra namesake with dishes such as Maine lobster salad, handmade pennette pasta with asparagus and caviar as well as beef tenderloin with braised short rib, butternut squash puree and glazed brussel sprouts. Society Cafe Encore
At Society Cafe Encore, guests can enjoy chef/partner Kim Canteenwalla’s modern takes on American classics in a four-course prix fixe and standard a la carte menus. Tasty options include a shellfish platter for two with Alaskan King Crab, Kumomoto Oysters, and tiger shrimp; a choice of lobster bisque or roasted beet salad; white truffle or chanterelle risotto as well as Land and Sea — filet mignon and butter poached lobster with bacon-spiked mashed potatoes. This New Year’s Eve, guests of Stratta can dig into approachable Tuscan fare from star award-winning chef Alex Stratta.
