Terra Verde at Green Valley Ranch is proud to introduce an array of new menu offerings created by recently appointed Executive Chef Massimo Pisati. Pisati has revamped the lunch and dinner menus with traditional Italian-inspired delights (Pictured: Terra Verde Clam Pasta).
The foundation of the new menu embraces traditional Italian techniques and imported ingredients, with a focus on seasonality and an elevated level of service.
“My culinary philosophy and passion reflect my roots and traditional upbringing in Milan, Italy,” said Pisati. “I allow the natural flavors of the food to always have an expression of their own and have incorporated this style into the new menu offerings at Terra Verde. I am thrilled to share this experience with our loyal guests and newcomers.”
Guests can enjoy the bright and inviting ambience of Terra Verde with an expansive lunch menu featuring a variety of selections, from antipasti, pizza and paninis to fresh and light salads. Signature items include involtini di melanzane (eggplant, mozzarella, provolone, marinara and basil), pizza uovo (radicchio, pancetta, romaine, foutina and fried egg), tonno nizzarda salad (ahi tuna, eggs, anchovies, iceberg, fingerling potatoes, green beans, olive, tomatoes and lemon vinaigrette) and branzino (Italian seabass, sautéed spinach and cherub tomatoes).
The new dinner menu also showcases an assortment of signature favorites, such as shrimp scampi (jumbo shrimp, lemon butter garlic sauce and sautéed leeks), tortiglioni sausages (spicy sausage, peas and tomato cream sauce), costoletta alla salvia (pan roasted veal chop, sautéed butter and sage, and rustic potatoes) and tagliata alla peperonata (grilled New York steak, potato crochette, black olives, capers and peperonate sauce).
