Chef Marc Vetri Perfects Pasta and More at Osteria Fiorella Coming to Red Rock Casino Resort & Spa in Las Vegas

Celebrated chef Marc Vetri is known in Las Vegas and Philadelphia for his elevated, rustic fare at his eponymously named Vetri Cucina at Palms Casino. While Palms is temporarily closed, Marc Vetri will bring his loyal team back to work and take over the kitchen at Terra Rossa at Red Rock Casino.

Chef will present Vegas diners with an expanded version of his wildly popular Philly pasta bar Fiorella, named after the famed family sausage storefront Vetri recently acquired. The Osteria Fiorella pop-up will kick off July 10 with an eclectic menu blending expressions of Vetri’s elevated Northern Italian sophistication, for which his name has become synonymous and dishes inspired by his Italian American upbringing in South Philadelphia.

The casual menu will feature Antipasti and Salads, Pizzas made in a wood burning oven, daily hand-made pastas, meat and fish cooked to perfection in a Josper charcoal oven and of course dessert, wine and cocktails.

At Osteria Fiorella, a notably different culinary vision of Italian cuisine than Vetri’s Las Vegas fans have become accustomed to, will focus on a variety of classics perfected by Marc while living and cooking throughout Italy. A selection of homemade pastas include rigatoni with Fiorella sausage ragu and locatelli cheese, Ricotta gnocchi with brown butter and crispy leeks, spaghetti with Bianco di Napoli tomatoes don’t forget to add Sal’s famous meatballs with bruschetta and ricotta (also served as an appetizer), an homage to Marc’s father Sal. Other menu highlights include the veal chop Milanese, and fried squid with agrodulce.

The Terra Rossa space will lend itself perfectly to the Vetri culinary residency with its casual and warm atmosphere, lively bar, beautiful patio and open kitchen concept. Similar to the atmosphere at Fiorella in Philly, Marc will complement the Osteria Fiorella dining room with paper placemats featuring his vintage family photos – a nod to the same warm hospitality guests have grown accustomed.

The open-ended restaurant takeover will begin July 10 and will be open Wednesdays through Sundays for 5 p.m. to 10 p.m. for dinner service initially with the opportunity for an expanded schedule and meal periods.
