Chef James Trees has announced a new dual-pronged restaurant project in collaboration with LEV Group Executive Chef Bruce Kalman. 

Due Fall 2020, a new restaurant named Scuola Vecchia (“Old School”) will reliven a space at 420 South Rampart Blvd. in Tivoli Village. The space, which formerly housed a Brio restaurant, features a semi-covered patio facing the Tivoli fountain, rotunda entrance, large bar and other dramatic features. Scuola Vecchia will bring to Tivoli a menu by Chefs Trees and Kalman blending regional Italian cooking and American Italian classics.

Dishes such as Chicken Parmigiana, Braciole and Trofia Genovese will be featured, alongside rotisserie meats, all made with the best local, fresh and housemade ingredients available. A carefully curated wine list and fuss-free old school cocktails will also be offered, with a focus on the inviting bar and patio areas. 

Meanwhile Ada’s, previously serving creative Italian, will evolve into a more casual wine bar, serving great wine discoveries by the glass and bottle, with tapas and small plates in a comfortable social environment. Wine and food will also be available to takeaway for picnics or enjoyment at home. James Trees will remain Chef/Partner of the space. 

“Both of these concepts are designed to bring new life into familiar territory,” said Chef Trees. “Bruce and I are excited to show everyone how great these cuisines can be when done with care and passion.”
