Pancho’s Mexican Restaurant in Downtown Summerlin to Reopen for Curbside Takeout

Just in time for Cinco de Mayo, Pancho’s Mexican Restaurant, located in Downtown Summerlin, will reopen for curbside pickup beginning  Friday, May 1. 

Pancho’s will offer a 15 percent discount on all food items and will also serve 20-ounce house margaritas to-go. The restaurant will strictly enforce social distancing in addition to following all CDC safety measures.

The Downtown Summerlin restaurant will be open Wednesday through Sunday from 11 a.m. until 7 p.m., with the exception of Cinco de Mayo on Tuesday, May 5, in which customers may order food and drinks for their “Cinco To-Go” celebrations.

Pancho’s will offer signature Mexican dishes including Burrito del Mar, a flour tortilla filled with sautéed shrimp, genuine crab, onions, tomatoes, bell peppers and rice, then deep fried and covered with Salsa Verde Especial, topped with melted cheeses and sliced avocados and sour cream, served with Mexican-style rice and beans; Pollo Asado, boneless breast of chicken marinated with achiote, garlic, and special Mexican herbs, grilled to perfection Yucatan style, served with an enchilada, Mexican-style rice and beans, complemented with guacamole, sour cream and pico de gallo; and Chimichanga de Pollo, a flour tortilla filled with spiced shredded chicken and cheeses, then deep fried and complemented with sour cream and guacamole, served with Mexican-style rice and beans, among other dishes.
