8 Noodle Bar Now Open at Red Rock Resort
8 Noodle Bar is now open at Red Rock Resort, serving lunch and dinner daily in the heart of Station Casinos’ popular Summerlin luxury resort.
The restaurant showcases a contemporary twist on traditional Asian dishes, served in an intimate atmosphere designed with vibrant colors and Feng Shui elements.
The Menu
Created by Chef Andy Vu, the menu showcases an array of Chinese, Japanese, Vietnamese and Thai cuisine, with an emphasis on noodle and rice bowls, steamed buns, pot stickers, spring rolls and more. The diverse yet approachable menu is also a terrific price point with most dishes coming in between $4 to $12.
Signature dishes include gyoza (pork, shrimp, Chinkiang dipping sauce), mochiko chicken (crispy chicken oysters, sticky garlic singer sauce), grilled beef short rib bao bun (ginger sake reduction, cucumber, pickled onion), pork belly bowl (steamed white rice, green onions, pickled ginger), kimchi fried rice (bacon, carrots, fermented black beans, scallions), shoyu ramen (chicken and veal broth, soy, pork belly, bamboo, green onions, mushrooms), tonkotsu ramen (rich and creamy pork broth, pork belly, poached egg, pickled ginger, bamboo, scallions, mushrooms), pad thai (rice noodles, egg, bean sprouts, peanut, lime, with tofu, chicken and grilled shrimp options), and fried pork sauce noodles (udon noodles, cucumber, bean sprouts, snow peas, scallions).
8 Noodle Bar offers a selection of reviving beverages to complement the savory cuisine, with specialty cocktails such as a Cucumber Martini (Ketel One Vodka, cucumber water, lemon juice) and Lychee Martini (lychee sake, Absolut Pear vodka, lychee puree, lemon juice), along with a variety of sake and beer offerings, and quenching non-alcoholic drinks like Thai Tea Nirvana and FOCO Lychee.
The Design
The intimate space seats 41 guests, including 30 seats in the main dining area and 11 at the chef’s counter, perfect for guests seeking a lively interactive culinary experience, as dishes are prepared and served right in front of them. Traditional Asian elements are represented with a modern twist throughout the restaurant, including an inviting and vibrant red façade, an intricate lattice screen and the restaurant’s signature logo, which is a dragon that takes the shape of the number eight (considered lucky in China and other parts of Asia). An exceptional display of suspended noodle bowls with calligraphy separates the space from the neighboring casino, creating an open environment. A single artwork piece featuring abstracted images of traditional noodle throwing techniques spans the 24-foot length of the bar, and custom furniture features dragons crawling across the back of banquettes among tables reminiscent of burnt wood.
Station Casinos consulted with a Feng Shui expert during the design process, to create harmony and balance in the restaurant. Many Feng Shui principles are represented in the space, including a color scheme that is well-balanced, presenting a radiant red entrance that activates the wealth stars and is auspicious for money. The location is said to sit upon a fortunate site (positive for success and relationship) and is equally supportive in the preparation of food and productive relationships among the restaurant team; while the neighboring gaming area emits fire energy and is positive for the success of the restaurant.
