at The LINQ will celebrate Mexican Independence Day with a specialty menu from Friday, Sept. 12 through Tuesday, Sept. 16. 

A Mexico City native, Executive Chef Ernesto Zendejas has crafted an authentic menu of Mexican specialties, available exclusively for the holiday. Guests will enjoy authentic dishes including Mexican creamed corn served with pinots, priced at $8; and cochinita pivil tamales served with an ancho chile sauce, priced at $16.

Delicious entrées will include the Mole Sampler, including mini short ribs with mole negro, duck carnitas with pasilla mole and chicken breast with red mole, priced at $28. The chile en nogada entrée is stuffed with marinated pulled pork and priced at $22. For a sweet finale, patrons will finish the meal with a buñuelo, a fried dough ball served with mango ice cream, priced at $8.

To accompany the authentic and history-filled Mexican cuisine, guests will choose from a selection of 50 tequilas from the bar or a signature cocktail including the Puncho Villa made with Tanteo jalapeño tequila, fresh lime juice, fresh watermelon and cucumber mint; or the Chayo Paloma made with Don Julio Silver tequila, San Pellegrino Pompelo and fresh grapefruit. With enough liquid courage, revelers may take a spin on the restaurant’s feisty mechanical bull, “Chayo.”

Located just steps away from the Las Vegas Strip with direct access from The Quad Resort & Casino, Chayo is situated near the beginning of The LINQ corridor, which leads to the Las Vegas High Roller Observation Wheel, offering unobstructed views of the world’s largest observation wheel.
