Mandalay Bay President and COO Chuck Bowling, Delano Las Vegas General Manager Matthew Chilton and Chef Ducasse kicked off the occasion with a champagne toast in Rivea’s scenic private dining room.

In the heart of the action, Chef Ducasse mingled with guests at Skyfall Lounge, who were treated to delectable small bites from the restaurant’s Riviera-inspired menu. Executive Chef Bruno Riou orchestrated the kitchen, serving tastes of Rivea’s signature small plates including Pizzettas, Marinated Seabream, Roasted Panisse, Vitello Tonnato and many more. As a nightcap, Chef Riou delighted guests with a selection of mouth-watering desserts, including Rivea’s Limoncello Baba and Tiramisu.

Showcasing their new cocktail program designed specifically for Rivea and Skyfall Lounge, Proprietors LLC partners David Kaplan, Alex Day and Devon Tarby introduced Las Vegas to the next evolution of cocktails, with a strawberry and jalapeño-infused tequila concoction called Shake it Off, a bourbon and rum Kentucky Colada, and several other signature libations. Additionally, the Martini Education Bar offered five different styles – dry, wet, Gibson, dirty and Fleming.

All the way from St. Tropez, DJ Jack-E set the tone with upbeat electronic music as guests took in views of the spectacular Las Vegas skyline from Skyfall Lounge’s floor-to-ceiling windows and breathtaking patio.

Rivea and Skyfall Lounge are now open, located on the 64th floor of Delano Las Vegas. Hours of operation are:

  • Rivea is open 6 p.m. to 10 p.m. Sunday through Thursday and 6 p.m. to 10:30 p.m. Friday and Saturday. Reservations available through OpenTable.
  • Skyfall Lounge is open 5 p.m. to midnight Sunday through Thursday and 5 p.m. to 1 a.m. Friday and Saturday. Reservations available through OpenTable.
