Christmas Day Menus

Carmel Room will offer a three-course holiday feast from 2:30 p.m. – 9:30 p.m. for $52 a person.

The first course consists of a Carmel Holiday Salad or Seared Atlantic Sea Scallops. For the second course patrons have the option of salt crusted Pork Loin, Shallot Potatoes, Prosciutto Wrapped Asparagus, Pinot Noir and Soy Reduction or Roasted Holiday Goose with a side of Cumberland Braised Red Cabbage, Spaetzle, Roasted Sweet Potato, and Cabernet Cranberry Sauce or Holiday Surf and Turf featuring a Petite Filet Mignon and Atlantic Salmon with a side of Au Gratin Potatoes, Roasted Salsify, Merlot Reduction and Dill Butter. For dessert a choice of Holiday Stollen or Eggnog Crème Brulee will be served.

Promenade Café will feature a three-course meal from 11 a.m. – 10 p.m. for $12.95 per person.

For the first course guests have the option of either Roasted Butternut Squash Soup or Santa’s Favorite Salad. The second course consists of Oven Roasted Game Hen over a side of Wild Rice, Fresh Roasted Vegetables, and Cranberry Stuffing or Apricot Glazed Ham served with Sweet Potatoes, Brussel Sprouts, and Candied Walnuts or Traditional Roasted Turkey with a side of Green Bean Casserole, Mashed Potatoes and Gravy, Stuffing, and Cranberry Sauce. For dessert a choice of either Fruit Cake or Pumpkin Pie will be served.

Rampart Buffet will offer a Christmas Day feast from 11 a.m. – 9:30 p.m. for $16.95.

Rotisserie Leg of Lamb, Old Fashioned Pot Roast of Beef, Chicken Supreme with Saffron Risotto, Sole Florentine, Turkey “Bobbie” Shepherds Pie, Potato Latkes, and Green Beans with Pancetta will be featured. The Christmas Day feast will also include an Asian station, American station, soup and salad bar, and dessert station which will offer Pumpkin Pie, Sweet Potato Pie, Christmas cookies as well as a variety of other dessert items.

New Year’s Eve Menus

Carmel Room will offer a four-course meal from 5 p.m. – 11 p.m. for $100 a person or $150 with wine pairings.

For the Amuse Bouche a Trio of American Sturgeon Caviar, Potato Pancake, Quail Egg, and Kumamoto Oysters will be served. The first course an Alaskan King Crab with shaved Fennel and Orange Supremes. The second course Serrano Ham featuring Jamon Serrano and shaved Oregonian Pears, Boursin stuffed Olives and Black Truffle Champagne Vinaigrette. For the intermezzo White Grape Sorbet with a splash of Champagne. For the third course guests can choose from either Seafood Medley served with Asparagus Risotto and Lobster Broth or Tenderloin of Beef served with Roasted Shallot, Potato Gratin, and Merlot Reduction or Violet Lamb Rack served with Sautéed Baby Vegetables, Yukon Potato Puree, and Violet Mustard Sauce. For dessert a New Year’s Eve Finale Chocolate Celebration which includes Chocolate Covered Strawberries, Molten Lava, Sorbet, Petite Fours, and Truffles.

Promenade Café will offer a three-course meal from 4 p.m. – midnight.

For the first course guests can choose from either a Lobster Bisque or Fall Medley. The second course consists of New Year’s Feast Trio Plate featuring Lamb Chop, half a Lobster Tail and Filet Mignon served with a side of Oven Roasted Root Vegetables, and Buttered Fingerling Potatoes for $44.99 or Filet Mignon served with Béarnaise Sauce, Steamed Asparagus, and Petite Potatoes for $29.99 or Pan Seared Sea Bass served with Sautéed Leeks, Roasted Vegetables, and Scalloped Potatoes for $24.99. For dessert a White Chocolate Cheesecake with Raspberry Sauce served with a complimentary glass of Champagne.
