Emmy Award-winning celebrity chef and New York Times best-selling author Giada De Laurentiis has been developing the brunch menu since the restaurant’s opening in June 2014. De Laurentiis and chef de cuisine, Bruno Morabito, have created a brunch menu with the perfect blend of sweet and savory, and have introduced new dishes and brought back some fan favorites.

One of the most important elements to any brunch is an expansive beverage program, one element brunch at GIADA is sure to delivers. Limitless La Marca mimosas are available for $30, or for those who prefer more premium brands, bottles of brands like Moet & Chandon, Ferrari and Veuve Clicquot are also available at a valued price. The beverage menu will also feature a classic Bloody Mary made with RIPE cold-pressed Bloody Mary mix; Giada’s signature sangria; bellinis; and non-alcoholic creations and fresh squeezed juices.

Two of the new dishes are the Lobster Hash and the Italian Chicken & Waffle. The Lobster Hash features marble potatoes, Nueske’s bacon, large pieces of lobster meat, peppers, tomato, onion confit topped with two sunny side eggs and a side of toast. The Italian Chicken and Waffle incorporates one of De Laurentiis’ notable dishes, her Chicken Cacciatore, but couples it with a Parmesan and chive crusted polenta waffle that guests can dip in cacciatore sauce or traditional syrup with a side of lemon butter.

De Laurentiis has also expanded the selection of house-made pastries, which guests can select individually or create a basket of five. The assortment contains traditional options such as a banana muffin with chunks on banana baked in, a gluten free blueberry muffin, a polenta muffin, a raspberry Danish and a cheese Danish made with ricotta cheese. Other selections feature a more modern spin such as the savory bacon corn muffin topped with crème fresh, the orange sticky bun, raspberry citrus yogurt cake, a rosemary scone and chocolate croissant monkey bread. For the chocolate lovers, the pastry selection also includes gluten free chocolate hazelnut brownie bites.

Returning favorites include the Tenderloin Sliders served with a pepper jelly; the Sunrise Polenta Waffle featuring pancetta, chives, two sunny side up eggs and a side of both béchamel and noble maple syrup; and Salmon Cake Benedict with wilted spinach, piquillo peppers and poached eggs with Prosecco hollandaise sauce. The menu also features a variety of antipasti, salads, sandwiches and pasta.

GIADA brunch can be experienced a la carte or via a carefully curated tasting menu. For $45, the tasting menu includes an assortment of pastries; an antipasti platter with eggs benedict deviled eggs, mini pizza di pasta and brussel sprouts crostini; an entrée and a dessert selection of limoncello souffle with buttermilk gelato, a leaning tower of chocolate and espresso or a lemon ricotta cookie ice cream sandwich with raspberry and buttermilk gelato.

Since its debut, GIADA has received rave reviews and was even awarded “Best Italian Restaurant” by the readers of the Las Vegas Review-Journal, and continues to be one of the most sought after reservations in Las Vegas. GIADA’s menu embraces De Laurentiis’ Roman heritage, mirroring her passion for Italian cooking with vibrant, Californian influences. GIADA utilizes the freshest ingredients to create a new take on the traditional Italian cuisine, while staying true to classic favorites. With its warm décor featuring De Laurentiis’ personal style, the restaurant also boasts a priceless view of the Strip from the second story of The Cromwell.
