Hearthstone Kitchen & Cellar Unveils New Spring Menu
As the season changes, so too do the menu items at Summerlin’s most inventive eatery, Hearthstone Kitchen & Cellar (Pictured: Black Truffle Hanger Steak).
Aside from the additions of mouthwatering items such as heirloom watermelon salad and Salmon Carpaccio, Hearthstone is also cracking opening up its cellar for Vino Monday. Every Monday night Hearthstone offer’s 50 percent off all bottles of wine under $100.

Upon opening Hearthstone in October 2014, Executive Chef Brian Massie promised to keep his menu evolving with the most seasonal ingredients while still keeping the crowd favorites available to guests. With the unveiling of Spring menu, he has done just that.
Signature dishes such as peekytoe crabby snacks, charred octopus and Hawaiian shrimp pasta all remain on the menu, but Massie has added soon-to-be favorites halibut ceviche — a blend of fresh halibut, compressed watermelon, avocado and basil — to the menu, along with a succulent crispy skin turkey drumstick and a black truffle hanger steak, a beautiful marriage of straight-from-butcher meat with black truffle butter, truffle aioli and crispy potatoes.

“We try to put a personal spin on our dishes so that guests can have a new and fresh experience every time they dine with us,” Massie said. “The latest menu additions ensure guests can enjoy the best of what Spring has to offer in a warm, welcoming environment. “
With Vino Monday’s guests can certainly sip on some of their already affordable favorites, but they are absolutely encouraged to experiment with different labels, varietals and vintages.
A night at Hearthstone is more than just the food and wine — it’s an experience. Beginning on Friday and continuing weekly, DJ Pearce will create the perfect evening soundtrack as he performs a live DJ set beginning at 9 pm.
Since opening, Hearthstone, located inside Red Rock Resort, has established itself as a leader in simple, graceful food. With the new menu items, the Summerlin staple is continuing to carry the torch for seasonal, approachable cuisine.
