Newly-named Executive Chef Sterling Buckley worked with Corporate Executive Chef Billy DeMarco to create a spring menu that highlights the crisp, garden-fresh ingredients that are currently in season and includes an array of new small plate items in addition to remaining favorites.

New menu items from the sea and farm include ahi sashimi made with pickled watermelon and cilantro caviar, priced at $16; herbes d’Amour spaghetti topped with Gouda foam, priced at $15; and smoked pork rillette with honey mustard and horseradish, priced $16.

La Cave has also introduced new dishes from the grill including prawns with baby corn, long beans and chili vinaigrette, priced at $18; mini burgers topped with chipotle mayo and mushroom duxelles, priced at $15; American Wagyu skirt steak with baby zucchini and truffle gremolata, priced at $25; salmon served with baby fennel, ‘hen-of-the-woods’ mushrooms and saffron vinaigrette, priced at $21; and a Black Angus sirloin accompanied by a mushroom fondue with cipollini for $23.

To accompany the new dishes, La Cave has rolled out a refreshing cocktail menu for the spring season with signature drinks priced at $16 each. The hand-crafted drinks include: La Cave Mule made with Ketel One Vodka, Orange Muscat, ginger beer and basil; Strawberry Spritz made with Chopin Rye Vodka, strawberries, lemon honey sour and sparkling brut; Driving Miss Daisy made with Hendrick’s Gin, Hibiscus Liqueur, fresh lemon, raspberries and sparkling brut; Tangeroni made with Bombay Sapphire, Campari, tangerine, fresh lemon and Prosecco; Bellini Bianco made with Carpano Antica, white peach, fresh lemon and Prosecco; Asian Pear & Habanero Margarita made with Casamigos Blanco Tequila, fresh lime, Agave, Asian pear and habanero; Bourbon Royale made with Blackberry-Sage infused Woodford Reserve Bourbon, Elderflower and Prosecco; Birds of a Feather made with Avu á Amburana Cachaca, sherry, fresh lemon and pineapple, almond and nutmeg; Southern Belle made with mint-infused Courvoisier VSOP Cognac, apricot and vanilla; and Can’t Stop Me Now made with Jameson Irish Whiskey, Fireball Cinnamon Whiskey, fresh blackberries, mint and ginger beer.

In addition to new cocktails, La Cave will also offer non-alcoholic ‘mocktails’ which include the BlackBerry Sparkle made with club soda, fresh lemon juice, blackberry Monin and fresh raspberries; and the Cucumber & Ginger Cooler made with Fever Tree Ginger Ale, fresh lime juice, fresh cucumbers and syrup.

La Cave is located inside Wynn Las Vegas and is open Monday through Thursday from 11:30 a.m. to 11 p.m. and Friday through Sunday from 11:30 a.m. to midnight.
