gets festive with specialty Christmas menus, available Sunday, Dec. 25 at the property’s most popular restaurants, including Baja Miguel’s, Coronado Café, Don Vito’s, Garden Buffet, Primarily Prime Rib and Silverado Steak House (Pictured: Herb Roasted Young Turkey, featured on every restaurant’s Christmas menu)

Guests can celebrate the season by enjoying traditional dishes and gourmet alternatives with friends and family.

Baja Miguel’s will serve a three-course menu with a complimentary house margarita or glass of wine for $17.95 per person from 11 a.m. to 9 p.m., including:

  • Appetizers: Salad Fiesta, chopped romaine topped with corn, tomatoes, black olives, grated cheese and tortilla strips, served with salsa ranch dressing; or Chicken Tortilla Soup.
  • Entrées: Herb Roasted Young Turkey with giblet gravy, apple and chestnut dressing, Yukon Gold mashed potatoes, cinnamon glazed yams, green beans and cranberry relish; or Pollo Valdestano, breaded chicken breast rolled with ham, asadero cheese and poblano peppers, golden fried and topped with pipian sauce, served with rice verde and charro bean.
  • Desserts: Flan De Fresa, strawberry flan with house-made strawberry sauce; or Christmas Yule Log with peppermint ice cream. Served with choice of tea or coffee.

Coronado Café will serve a three-course menu with a complimentary cocktail or glass of wine for $14.95 per person from 11 a.m. to 10 p.m., including:

  • Appetizers: Christmas Salad, iceberg and green leaf lettuce topped with red and yellow teardrop tomatoes and herb toasted croutons tossed in a champagne vinaigrette; or Festive Christmas Soup, cream of chicken garnished with red and green bell peppers.
  • Entrées: Herb Roasted Young Turkey with giblet gravy, apple and chestnut dressing, Yukon Gold mashed potatoes, maple glazed yams, green beans and cranberry relish; or Roast Sirloin of Beef with a cabernet sauvignon sauce, served with baked or Yukon Gold mashed potatoes and green beans.
  • Desserts: Christmas Yule Log with peppermint ice cream; or Warm Mince Pie with whipped cream.

Don Vito’s will serve a three-course menu with a complimentary cocktail or glass of wine for $39 per person from 4 to 9 p.m., including:

  • Appetizers: Pan Seared Lump Crab Cake with roasted tomato oil; Italian Sausage and Cabbage Soup; or Farro Salad with asparagus and shaved parmesan.
  • Entrées: Herb Roasted Young Turkey with giblet gravy, apple and chestnut dressing, Yukon Gold mashed potatoes or maple glazed yams, baked acorn squash with cranberry relish and green beans; Salmon Capri with Lemon Rosemary; Pancetta Wrapped Pork Medallion with onion marmalade; Rib Eye Steak with caramelized onion and gorgonzola; or White Lasagna with Butternut Squash. All entrees, except Herb Roasted Young Turkey, are served with a side of pasta and seasonal vegetables.
  • Desserts: White Chocolate Raspberry Tartufo; Dark Chocolate Pear Galette; or Warm Mincemeat Pie with rum and raisin ice cream. Served with choice of tea or coffee.

Primarily Prime Rib will serve a three-course menu with a complimentary cocktail or glass of wine for $35 per person from 2 to 9 p.m., including:

  • Appetizers: Sweet Chili and Mango Roasted Chicken Drumettes with a cous cous salad; Wild Mushroom and Sweet Potato Ravioli in saffron cream; Christmas Salad, lollorossa and green leaf lettuce with red and yellow teardrop tomatoes, tossed in a champagne vinaigrette; or Festive Christmas Soup, cream of chicken garnished with red and green bell peppers.
  • Entrées: Herb Roasted Young Turkey with giblet gravy, apple and chestnut dressing, Yukon Gold creamed potatoes or maple glazed yams, baked acorn squash with cranberry relish and green beans; Roast Prime Rib of Beef, 10 oz. cut, dry aged and slowly cooked for full flavor; Pan Roasted Sable Fish with winter ratatouille and lemon butter sauce; Mrs. Claus Special, poached chicken breast filled with raisins, dried fruit and brioche dressing with coconut rum cream sauce; or Brandy Flamed Peppercorn New York Steak, a pan seared 10 oz. New York steak with peppercorn cream sauce. All entrees, except Herb Roasted Young Turkey, are served with choice of chateau or Yukon Gold creamed potatoes with green beans.
  • Desserts: Warm Gingerbread Cake with Crème Anglaise; Chocolate Yule Log with Crème de Menthe; or Eggnog Mousse with raspberries. Served with choice of tea or coffee.

Silverado Steak House will serve a four-course menu with a complimentary cocktail or glass of wine for $55 per person from 5 to 10 p.m., including:

  • Appetizers: Mini Beef Wellingtons with Cumberland sauce; Festive Holiday Trio of Soups featuring tomato and basil bisque, cream of chicken and chilled honeydew; or Chilled Shrimp Cocktail with remoulade sauce.
  • Soup and Salad: Crab and Corn Bisque with bandy and crème fraiche; or Christmas Salad, lollorossa and green leaf lettuce, red and yellow grape tomatoes and hearts of palm, tossed in champagne vinaigrette.
  • Entrées: Herb Roasted Young Turkey with giblet gravy, apple and chestnut dressing, Yukon Gold mashed potatoes or maple glazed yams, baked acorn squash with cranberry relish and green beans; Prime Rib of Beef, dry aged and slow roasted for full flavor, served with roast chateau or Yukon Gold creamed potatoes and sautéed green beans; Grilled Pacific Salmon over sweet potato hash with red, green and yellow peppers, topped with cinnamon beurre blanc and balsamic glaze, served with fresh green beans; Charbroiled Filet Mignon with béarnaise sauce, grilled tomato, sautéed mushrooms and lyonnaise potatoes; or Medallions of Pork Zingara with julienne of ham, mushrooms and gherkins in Madeira sauce, served with sweet peas and wild rice pilaf.
  • Desserts: Warm Mince Pie with rum and raisin ice cream; Chocolate Yule Log with whipped cream; or Strawberry Cream Horn with fresh strawberries. Served with choice of tea or coffee.

Additionally, the Garden Buffet will serve a Christmas brunch and Christmas night dinner buffet. Brunch will be served for $15.95 with a Club Card or $19.95 without a Club Card from 8 a.m. to 2 p.m., and will include bottomless mimosas. The Christmas night dinner buffet will be priced at $16.95 with a Club Card or $20.95 without a Club Card from 3 to 9 p.m. Guests will receive one complimentary glass of house wine with the buffet dinner feast. The holiday buffet offers an assortment of a la carte options including Garden Fresh Salad Bar, Peel and Eat Shrimp, Festive Chicken and Corn Soup, Traditional Roast Turkey Dinner, Roast Prime Rib of Beef, Cider Baked Ham, Bourbon Glazed Roast Pork Loin, Chipotle Glazed Salmon and more. Guests can satisfy the sweet tooth craving with desserts such as Eggnog Cupcakes, Hot Cranberry Bread Pudding, Sticky Toffee Pudding and the gelato station. In addition, guests will enjoy an assortment of soups, salads, fresh fruits and six live international cooking stations.

Regular menus will also be available at Baja Miguel’s, Coronado Café, Don Vito’s, Primarily Prime Rib and Silverado Steak House on Sunday, Dec. 25. All guests must be 21 years of age or older with valid form of ID to receive the complimentary cocktail. Tax and gratuity are not included.
