The Cosmopolitan of Las Vegas Celebrates Chinese New Year Feb. 4-17
This February, The Cosmopolitan of Las Vegas is celebrating Chinese New Year with unique and limited-time cocktails and menu items in addition to hosting a “Dotting of the Eyes” ceremony and street parade.  Special décor honoring the holiday will also be visible throughout the resort from Feb. 4 – 17.

The celebration begins at China Poblano where José Andrés and his culinary team invite guests to take part in one of China’s greatest traditions.  From Friday, Feb. 1 through Thursday, Feb. 28, China Poblano will feature innovative cocktails and delectable menu items honoring the Chinese New Year.  Menu highlights include Goose, Goose, Duck, seared foie gras, salted egg custard and blood orange; 18 Monk Noodle, hand-cut wheat noodle, chanterelle mushrooms, and aged dark soy sauce; Scallop and Long Bean with Black Bean Paste, diver scallops, Chinese long beans and house made black bean paste; Lions Head with Saffron Napa Cabbage, pork, jicama, saffron and Napa Cabbage; Xinjiang Uyghur Lamb Chops, grilled lamb chop, toasted cumin, sweet onion and pomegranate.  In addition, José Andrés and the team have created three startling concoctions inspired by these traditional festivities including The Mei Mei, Plum Delight and Imperial Tea.

To celebrate the “Year of the Snake,” The Cosmopolitan of Las Vegas will hold a “Dotting of the Eyes” ceremony at the resort entrance Sunday, Feb. 10 at 4 p.m.  During the ceremony, which will take place at the East Side entrance off Las Vegas Boulevard, around 40 performers will “awaken” the dragon and lions by dotting their eyes with red paint.  Once awakened, the twisting and turning dragon will lead a parade of lions and dancers throughout the casino floor.  The moving celebration will make a stop at The Talon Club for a “Collecting of the Cabbage” ceremony.
