Chef Marc Marrone to Open Graffiti Bao in Las Vegas Sept. 18
Chef Marc Marrone has announced Wednesday, September 18, as the opening date for the first stand-alone Graffiti Bao restaurant, located at 7355 S Buffalo Dr #A, Las Vegas, NV 89113. The fast casual restaurant is an exploration of Southeast Asian street food inspired by Chef Marc’s travels, capturing the energy of night markets in a more comfortable setting, with an energetic interactive staff (Pictured: Chef Marc Marrone cooking in Singapore).

Menu highlights will include:
- Signature bao including kung pao chicken; crispy chili veggies; chinese sausage, green curry and more
- Special truffle shrimp & lobster bao (limited)
- Bone marrow chow fun
- Vietnamese crab fried rice
- Singapore chili crab croquettes
- Thai basil noodles
- Szechuan chili poached chicken
Other noteworthy elements include night market-inspired decor, TVs showing classic Asian and vintage action movies, and a group dining table offering a special family-style menu.
“I’m passionate about Asian food and really excited to share a lot of dishes I’ve been working on,” says Marrone. “Some traditional and some with a few new ideas.”
Graffiti Bao is the first stand-alone concept by Marrone and partner Todd Lunger; It previously opened as a counter concept in the T-Mobile Arena in April 2019, where it continues to serve guests during all Vegas Golden Knights games and select events.
