Pancho’s will pay tribute to the games with the Gold Medal Margarita, made with Sauza Conmemorativo tequila mixed with fresh lime juice, sweet and sour and triple sec, garnished with a salt rim and priced at $10.75. Pancho’s will show the summer games on high-definition televisions spread throughout the cantina.

Guests can also enjoy signature menu items such as the Botanas Especiales, a combination platter loaded with cheesy flour quesadillas, crispy chicken drumsticks, beef taquitos and chicken flautas, served with sour cream and guacamole, priced at $15.95; and the Birria Chef Ramon, a centuries-old dish featuring oven-roasted beef marinated in special herbs and guajillo chiles, accompanied by onions, cilantro, limes and a special sauce, served with Mexican-style rice, frijoles de la olla and hot tortillas, priced at $17.95 for lunch and $22.95 for dinner.
