Glutton Introduces Dog-Friendly Bark-and-Bites Patio Brunch, New Seasonal Menu Items
Downtown Las Vegas’ Glutton, an acclaimed gastropub by visionary Chef and Restaurateur Bradley Manchester, debuts its “Bark-and-Bites” dog-friendly brunch. 

Available on the restaurant’s shaded, sidewalk-accessible patio—meaning there’s no need for patrons and their pups to enter the restaurant—the weekend event takes place Saturdays and Sundays from 9 a.m. to 3 p.m. To be seated on the patio for brunch, guests with furry friends simply need to check in with the host or hostess at the front of the restaurant, who will then direct them to the back patio gate and open it for them.

Guests can enjoy Glutton brunch favorites such as its Wild Mushroom Omelette with goat cheese and breakfast potatoes; Yeast-Risen Pancakes, with cultured butter and maple cider syrup; Proper Breakfast Sandwich, with house-made sausage, caramelized onions, soft scrambled eggs, spicy bacon mayo, cheddar and duck fat potatoes; and Breakfast Salad, comprising wild greens, bacon, soft poached egg, duck fat potatoes and green goddess dressing. Plus, Glutton will offer all canine visitors fresh bowls of water and dog treats.

In addition, Glutton has added new seasonal dishes to its menu, including Shrimp and Grits, with pork belly, fried tomatoes and Louisiana BBQ sauce; Tomato Salad, featuring Blue Lizard Farms’ heirloom tomatoes, ice wine vinegar, fried mozzarella balls, balsamic chips and fresh herbs; Lamb Meatballs, featuring tomato chutney, cucumber yogurt sauce, grilled ciabatta, pickled shallots and pickled feta; Wood-Roasted Halibut, with wild-caught Alaskan halibut, spring peas, pea-and-poblano puree, shrimp and foie gras croquets; and Watermelon Salad with basil vinaigrette, ricotta salata, cucumbers and tomatoes.

Glutton showcases savory meats, locally sourced produce, house-made pastas and seafood from the Pacific Northwest. Created with an adventurous palate in mind, the cuisine appeals to diners who enjoy trying new things and appreciate fresh, flavorful ingredients. A wood-burning oven imparts rustic flavors to roasted meats and vegetables, enabling Manchester to make the most out of simply prepared yet wholesome and high-quality ingredients. Through a partnership with local farms, Glutton offers custom herb and greens mixes, which provide the foundation for his surprising fresh salad and vegetable dish repertoire. Rather than heavily salting or adding fats to many of his dishes, Manchester is fond of using generous amounts of herbs and acids—succh as citrus and vinegars—to brighten his creations and “œwake up” diners’ palates. On the flipside, Manchester offers dishes crafted to be truly indulgent. Desserts incorporate wood-roasted fruits, homemade ice cream and comfort-food offerings.

At the bar, Glutton serves up seasonal, handcrafted cocktails using fresh, hand-made ingredients. Craft beers and a boutique wine list are also available, including several by-the-glass wine selections.
