Pancho’s Mexican Restaurant, located in Downtown Summerlin, will celebrate Easter with a festive champagne brunch from 10 a.m. to 3 p.m. on Easter Sunday, April 16 (Pictured: Pancho’s Huevos Divorciados – Photo credit: Chris Wessling)

With the purchase of an entrée, guests will receive complimentary champagne, seasonal fruit and buñuelos for dessert—crispy pastries sprinkled with cinnamon and sugar. Families are encouraged to get into the Easter spirit with photos with the Easter Bunny, who will be hopping around the restaurant all day long. In the evening, Las Vegas keytarist and singer, Grant Peacock, will play in the cantina from 5:30 to 8:30 p.m.

Brunch selections include the delectable Huevos Divorciados, two eggs cooked over-medium separated by a beef enchilada covered with a chunky Poblano sauce and sprinkled with Cojita cheese, priced at $17.95; Machaca Guadalajara, shredded beef sautéed with tomatoes, onions and bell pepper, mixed with scrambled eggs and served with Mexican-style rice and beans, priced at $17.95; and Enchiladas de Avocado y Artichoke Hearts made with corn tortillas rolled and stuffed with avocado and sautéed artichoke hearts and topped with roasted tomatillo sauce served on a bed of sautéed spinach, priced at $18.95.
