The thoughtfully unique, yet approachable dining experience is inspired by Chef Krohmer’s vision of providing locals and tourists alike with a traditional omotenashi-style of service that invokes the sense of “subliminal happiness” he has personally encountered through his travels to Japan and specifically found in a throwback hotel lobby bar in Tokyo.

The menu features robata izakaya dining with a highlights from the yakitori bar’s selection of skewers; from Jidori chicken that’s broken down in-house nightly, Snake River Farms beef, lamb, seafood and vegetables grilled over Japanese charcoal; assorted plates includes chef’s interpretation of classic pork gyoza, a beautiful presentation of beef tatakilomi lomi with ocean trout, eggplant katsu, and an already crowd-favorite shrimp okonomiyaki dish, as well as several other soon-to-be signature items using always responsibly-sourced ingredients.

The menu is subject to change daily and is composed of exclusively the freshest meats, seafood and produce available. For the ultimate culinary journey, an omakase-style chef’s tasting menu is available for a set price starting at $55 per person and reservations are strongly recommended as quantities are limited. Nightly tasting menus can be prepared to accommodate vegetarians and vegans if desired.

“The support we’ve received from our neighbors downtown and from all over the city of Las Vegas has been overwhelming,” says Chef Krohmer “I couldn’t be more proud of the team that has built Hatsumi and for the opportunity to open our doors for everyone to experience the Japanese style of hospitality and cuisine that I’ve dreamed about bringing to our community for years finally become a reality.”

Since partnering with Fergusons Downtown back in early 2018, Chef Krohmer has been meticulously overseeing the concept’s development to date and appointed Chef de Cuisine Bobby Silva. Chef Bobby brings a wealth of experience in Japanese dining on the Strip with respected organizations such as Mina Group, SushiSamba and Momofuku under his belt and has fallen into perfect sync with Chef Krohmer’s initial vision for the menu to take the reins and oversee all kitchen activity to his own technical and creative standards.

The beverage program at Hatsumi is composed of the largest selection of sakes in downtown Las Vegas, assorted Japanese beers and a curated domestic and international wine list. The full bar boasts an extensive cocktail menu including unique options such as the Awasake with rum, grapefruit and lemon verbena, the Kyoto with Japanese whiskey, orgeat and bitters, and the Sling with gin, cherry herring, Benedictine and lemon.

Hatsumi pays homage to the neighboring downtown Arts District with the addition of Yerman the Sad Yeti, who graces the walls and adds a local design flair by Las Vegas artist Ryan Brunty of Depressed Monsters. In addition to the local representation, Desert Bloom Eco Farm proudly provides its sustainably grown hyper-seasonal produce for the kitchen to incorporate into the menu nightly.

Located in the ever-evolving East Fremont district in Downtown Las Vegas, Hatsumi is now open and offers dinner only from 5 p.m. until 10 p.m. Thursday – Monday.
