Pancho’s Mexican Restaurant Goes Loco for Cinco de Mayo
In celebration of Cinco de MayoPancho’s Mexican Restaurant, located in Downtown Summerlin, will host an all-day fiesta featuring mariachis, traditional Mexican food and tequila shot specials on Saturday, May 5 (Pictured: Pancho’s Patrón Barrel Select Reposado Shots)

A mariachi band will spice up the festivities with traditional Mexican music for partygoers from noon until 5 p.m. Available throughout the restaurant, guests can enjoy Pancho’s Patrón Barrel Select Reposado shots, priced at $6.95 each. The fiesta will continue throughout the night with live music in the cantina by Siana King, beginning at 7 p.m.

Guests can enjoy Pancho’s signature menu items including Enchiladas Suizas, corn tortillas filled and rolled with chicken, then covered with Salsa Verde Especial, topped with sliced avocados and sour cream and served with Mexican-style rice and beans, priced at $15.95 for lunch and $19.95 for dinner; Carne Asada a la Ab, thin, charbroiled flat-iron steak served with a cheese enchilada, guacamole, sour cream, pico de gallo and Mexican-style rice and beans, served on a hot skillet, priced at $20.95 for lunch and $25.95 for dinner; and “Wahoo” Fish Tacos, made with two flour tortillas filled with grilled Wahoo fish, shredded cabbage, pico de gallo and chipotle sour cream, served with Mexican-style rice and beans, sour cream and guacamole, priced at $16.95 for lunch and $18.95 for dinner.
