New appetizer selections include: shrimp cocktail, large shrimp accompanied by house-made chilled cocktail broth, garnished with avocado, pico de gallo and cucumbers; shrimp ceviche, a blend of shrimp marinated with onions, lemons and spices, served cold with tostaditas and avocado slices; and mariscos en crema de limon, shrimp and scallops sautéed in a lemon cream sauce, garnished with poblano peppers and served with tostadita chips.

New entrée selections include: chile poblano del mar, a green chile poblano stuffed with crab meat and shrimp, sautéed with garlic, onions and tomatoes, and topped with green tomatillo sauce and melted cheese, served with Mexican-style rice and black beans; steak picado, tender chunks of flat iron steak sautéed with green peppers, onions and tomatoes, seasoned with Chef Ramon’s special herbs and spices and smothered in melted cheeses; camarones en crema de ajo, jumbo shrimp sautéed in garlic butter with onions and cherry tomatoes, served with green rice and grilled julienned vegetables; beer-battered fish tacos, two corn tortillas filled with crispy Mahi-Mahi, shredded cabbage, pico de gallo and chipotle sour cream, served with Mexican-style rice and beans; and for dessert, sopapillas, crispy pastries covered in cinnamon sugar, drizzled in caramel sauce and served with vanilla ice cream.

An addition to the kid’s menu, Pancho’s now offers pigs in a blanket, prepared with a flour tortilla for a festive twist on the American classic, including a scoop of ice cream for dessert.
