Pancho’s Mexican Restaurant to Thank Moms with Champagne Brunch for Mother’s Day
Say “gracias” and spoil mom! Pancho’s Mexican Restaurant, located in Downtown Summerlin, will host a Mother’s Day brunch fit for a queen from 10 a.m. to 3 p.m. on Sunday, May 14 (Pictured: Huevos Divorciados Photo credit: Chris Wessling). 

With the purchase of an entrée, mothers will be treated to complimentary champagne, seasonal fruit and buñuelos for dessert—crispy pastries sprinkled with cinnamon and sugar and topped with whipped cream. In the evening, noted Las Vegas musician, Grant Peacock, will perform in the cantina from 4:30 to 8:30 p.m.

Brunch selections include Machaca Guadalajara, shredded beef sautéed with tomatoes, onions and bell pepper, mixed with scrambled eggs and served with Mexican-style rice and beans, priced at $17.95; Huevos Divorciados, two eggs cooked over medium separated by a beef enchilada, topped with a chunky poblano sauce, Cotija cheese, sliced avocado and sour cream, served with Mexican-style rice and beans, priced at $17.95; and the Especial de Cabo, chunks of chicken mixed with sautéed shrimp, genuine crab meat, onions and tomatoes blended with herbs and wine, topped with melted cheese, diced avocado and tomatoes, served with Mexican style Rice and beans, priced at $22.95
