Panevino Ristorante Introduces New Vegan and Vegetarian Specials to Ristorante and Gourmet Deli

Panevino Ristorante proudly introduces several new special vegan and vegetarian options for its guests, furthering the Italian restaurant’s commitment to healthy dining and guests’ tastes and dietary preferences.

“There is a misconception that dining – like vegan, vegetarian, gluten-free – is boring or bland and it’s simply not true,” said Vincenzo Granata, General Manager at Panevino Ristorante. “We’ve made a commitment to create special selections that are healthy, but first and foremost, taste delicious. Additionally, as a business, and especially in this economic environment, I think it is crucial to appeal to a demographic of guests who may have never visited Panevino otherwise.”

Panevino’s Executive Chef Mario Andreoni created the new vegan and vegetarian specials. The two entrée items – Tortelloni Tricolori and Duo di Burger di Vegetali e Brodo Vegetale – both highlight vegetables and contain no animal products.

The Tortelloni Tricolori features homemade three-color tortelloni filled with roasted vegetables including eggplant, yellow squash, zucchini, red bell pepper, asparagus, garlic and onion on a bed of fresh tomato sauce. The homemade pasta contains no eggs and is made simply with flour, Durum Semolina, water and a pinch of salt. Panevino’s heartier vegan burger entrée option, its Duo di Burger di Vegetali e Brodo Vegetale, features duo of homemade vegetable burger made with eggplant, mashed potatoes, porcini and Portobello mushrooms, roasted yellow and red bell peppers and bread crumbs drizzled with White Truffle Oil on soft Focaccia bread with grilled asparagus and roasted tomatoes and warm vegetable broth.

Additionally, Panevino’s gourmet deli now offers five vegan and vegetarian salad lunch selections and a variety of organic teas, juices and coconut water.

The new deli salads include:

  • Lentil Salad:  lentils, wild arugula, cherry tomatoes, red onion, extra virgin olive oil
  • Three Bean Salad:  green beans, garbanzo beans, cannellini beans, roasted tomatoes, red onion, extra virgin olive oil
  • Orzo Pasta Salad:  orzo pasta, cherry tomatoes, black olives, capers, basil, avocado, grilled asparagus, chopped parsley, extra virgin olive oil
  • Borlotti Bean Salad:  Italian Borlotti beans, cherry tomatoes, avocado, red onion, garlic, basil, extra virgin olive oil
  • Pasta Salad: Tri-color spiral shaped pasta, roasted tomatoes, fresh mozzarella cheese, arugula and extra virgin olive oil 

Panevino also offers several gluten-free selections for guests with special dietary needs. Any pasta selection can be customized to include gluten-free penne, spaghetti or risotto.
