Sharky’s Modern Mexican Kitchen 
is set to open its second Las Vegas location in mid-July. The second Sharky’s location will be located at 5070 Blue Diamond Road, just west of Decatur Boulevard. 

Founded in 1992, CEO Steven Paperno developed a restaurant concept which combined his passion for healthy living with the diverse and delicious flavors of Mexico. The fast-casual restaurant offers a comfortable and welcoming atmosphere with fresh and modern menu items that are made-to-order using organic and non-GMO ingredients that all guests can feel good about eating.

Formerly Sharky’s Woodfired Mexican Grill, the restaurant is focusing on new flavor profiles along with its new name and location. Reimagining its modern approach to Mexican cuisine in a more contemporary and inventive way, Sharky’s maintains its commitment to organic, clean eating. The menu now features cooking techniques beyond the grill including roasting and braising. The flavors appeal to the diversity in tastes as individual as the people living them – from vegetarian or vegan to gluten-free and low-carb to no particular preference at all.

New offerings are highlighted by tacos such as the Chipotle-Braised Chicken Tinga with slow-cooked chicken thighs, Sharky’s sauce, pickled red onions, cheese, and cilantro in a corn tortilla; and the vegan Roasted Cauliflower and Mushroom tacos with “chorizo-spiced” cauliflower and mushrooms, mashed organic yams, sautéed spinach, arbol salsa, and pepitas in an organic flour tortilla. An additional focus is put on seasonal options including the Summer Harvest Salad made with organic mixed greens, quinoa, fire-roasted organic corn, zucchini and summer squash, tomato slices, sliced radish, pickled onions, cilantro buttermilk dressing, golden raisins, goat cheese and toasted almonds; and the BBQ Chicken Salad featuring fire-roasted organic corn, toasted pecans, sweet peppers and organic mixed greens, with a creamy chipotle BBQ dressing and crispy corn tortilla chips. Wash it all down with a handcrafted lemonade and a selection of local draft beers coming soon.

The restaurant takes its commitment to healthy living and extends that to its design with recycled or reclaimed elements both inside and outside the restaurant, such as a 99-percent recycled plastic wood alternative on the exterior; variable speed motors in kitchen exhaust hoods and air conditioning units to improve energy consumption; and thermalized insulated window glass and mechanized window coverings that are activated by sunlight, to reduce building heat load.
