A few of the spring menu selections include:
- Hot Oysters, a mix of fried oysters, chicken oysters, and pork oysters
- Cheesesteak Pierogi with homemade cheese wiz
- Beef Belly Sliders featuring pastrami’d beef belly and red gabbage kraut
- Blackened Catfish sandwich with spring pea glaze and a ginger remoulade
- Lamb Chops prepared with a pecan crust, and topped with mint chimichurri
- Rhubarb Sammy, rhubarb sorbet with a rhubarb macaron with elderflower whipped cream

Priced at $12, Carson Kitchen’s new cocktail selections include:
- Daaaammmnn Daniel! Made with New Amsterdamn Vodka, sage, lemon, and ginger simple syrup
- Super Tuesday with Barsol Pisco with rhubarb, lychee, fresh lime and an egg white
- Angry Tony made with Del Maguey Vida Mexcal, melon puree, ginger beer, contratto aperitif and a basil simple syrup
- First Saturday in May with High West Double Rye, mint, smoked honey and Thai bitters
- 68 + 1 with Woody Creek Potato Gin, raspberry, fresh lemon, egg white and simple syrup
