The opening of Hawthorn Grill marks the first new restaurant in five years, signifying new beginnings at the prestigious Summerlin resort. Hawthorn Grill boasts a menu featuring a perfect balance of crave-worthy steakhouse fare and American classics, alongside an extensive wine and cocktail program. Sure to be Summerlin’s newest hotspot, Hawthorn Grill features a rich bar area, perfect for an after-work or pre-dinner drink; a large, yet cozy dining room easily accommodating a large family dinner or a romantic date; and an expansive outdoor patio with a vibrant waterfall surrounded by lush foliage. The restaurant will be open daily for breakfast, including a signature breakfast buffet, dinner, and bar hours.

Chef Joseph Swan, formerly of the Eiffel Tower Restaurant, oversees Hawthorn Grill as executive chef, Christian Umlauf serves as general manager having also come from The Strip at db Brasserie, and JW Marriott Las Vegas Resort & Spa’s Executive Pastry Chef Jeremy Choo will oversee the sweet side of Hawthorn Grill. The team at Blau + Associates, a group that has taken west side dining to a new level, served as consultants on the project.

Chef Swan aims to take the traditional steakhouse to the next level with offerings such as Classic French Onion Soup with three types of onion, sherry, brioche crouton, gruyere and provolone; Roasted Beets & Burrata with prosciutto, toasted pistachios and arugula; and Sweet & Sticky Lamb Ribs with honey, mint, garlic and lemon as starters. In addition to signature steaks, highlighted entrees include Colorado Lamb T-Bone with chimichurri; a chili-rubbed Smoked Kurobuta Pork Chop; Main Lobster with Sweet Potato Gnocchi with spaghetti squash, spinach and shellfish butter; and a Slow-Braised Prime Short Rib with parsnip puree, roasted Brussels sprouts and crispy shallots. Sides include Hawthorn Grill’s Mojito Fries, Thick Cut Onion Rings, Cauliflower Gratin and Home-Style Mac and Cheese.

Guests can also indulge their sweet side with a mouth-watering dessert from Chef Choo. Sure to be popular with all palettes are the S’mores Churro with warm ganache, cinnamon sugar churros and toasted marshmallow; the Apple Tart Tatin with candied almonds and salted caramel sauce, served with vanilla bean ice cream; and the traditional Hawthorn Soufflé served with crème Anglaise and whipped cream .

To complement the classic menu, Hawthorn Grill’s bar program features a variety of hand-crafted cocktails from the seasonal Apple Cider Moscow Mule with Absolute Orient Apple Vodka, Apple Cider and Fever Tree Ginger Beer and the signature Hawthorn Mimosa featuring Pama Pomegranate Liqueur, St. Germain, fresh-brewed Hawthorn Tea topped with sparkling wine; to the modern classics like the Spice Market Old Fashioned with Knob Creek Bourbon, Spiced Maple Syrup and Moroccan Bitters or the Russell’s Reserve Barrel Aged Manhattan, barrel-aged in house for a minimum of 14 days. Hawthorn Grill also boasts an extensive wine list with more than 1,000 choices which can be seen on display as guests enter the restaurant.

“We’re so happy to unveil the latest restaurant at the resort,” said Michael Gaughan Jr., general manager of Rampart Casino and JW Marriott Las Vegas Resort & Spa. “Hawthorn Grill has been a long-time coming and we welcome our locals and visiting guests to come out and try what will be the first of several new amenities at our great property. Our food and beverage team have outdone themselves with a menu that brings an entirely new dining experience to the property.”

Situated in the Spa Tower on the south side of the resort, Hawthorn Grill boasts more than 18,000 square feet with seating for more than 370 guests in the main dining room, outdoor patio, and lounge. Guests can opt for the main dining room which features lush banquettes and tables in a chic steakhouse setting or nestle in one of the secluded, draped areas for a romantic dinner that is a nod to old Vegas. Diners will also be able to bask in the beauty of the spacious outdoor patio area with sounds of the nearby waterfalls and the delights of the beautiful foliage, including the restaurant’s namesake Hawthorn bush. The outdoor area will also include fire pits and heaters to ensure a perfect winter alternative. Two private dining rooms can seat groups from 18-40 and semi-private patios run alongside the larger private dining room as well as a small reception area, making it a perfect setting for a small wedding or special event.

Hawthorn Grill will be open daily for dinner 5 – 10 p.m. Sunday – Thursday and 5 – 11 p.m. Friday and Saturday. The lounge will be open 4 p.m. – midnight Sunday – Thursday and 4 p.m. – 1 a.m. Friday and Saturday. Hawthorn Grill will also be open for breakfast 6 – 11 a.m. Monday – Friday with the weekday breakfast buffet beginning at 7 a.m. Weekend breakfast hours are 6 a.m. – noon on Saturday with buffet beginning at 7 a.m. Sunday mornings will be home to Brunch with the brunch menu available 6 am. – 1 p.m. and the brunch buffet 7 a.m. – 1 p.m.
