Vincent Rotolo Brings Good Pie to Downtown Las Vegas on National Pizza Day
Award-winning pizzaiolo Vincent Rotolo will debut his first solo pizza project, Good Pie, in Las Vegas on February 9, dubbed “National Pizza Day.” Promising to “make good pie,” the Pawn Plaza location will pay homage to four distinct pizza styles and to grandma’s cooking. 

“I am so excited to bring Good Pie to downtown Las Vegas,” said Owner and Pizza Maker Vincent Rotolo. “This concept is a combination of my time learning from some of the best pizza makers in the world, my commitment to the art and science of pizza, and my desire to honor the grandma-style pizza and grandmas everywhere. It’s great to see this concept come to life; I just hope I do those nonnas proud.”

The Good Cause

As part of the National Pizza Day opening, Rotolo will welcome 2016 World Champion Pizza Maker Nino Coniglio of New York’s Brooklyn Pizza Crew and 2017 Caputo Cup Champion Derek Sanchez of Texas’ Mia Marco Pizza into Good Pie’s kitchen to participate in Pizza Across America to benefit Slice Out Hunger, an initiative that helps connect and provide food donated by independent pizzerias around the United States to raise money for local food banks and pantries.

In addition to participating in the national charitable event, downtown’s newest pizza shop will open its doors at noon, where Good Pie will offer $1 slices until 2pm with proceeds benefitting Nevada Partnership for Homeless Youth.

Rotolo added, “I have been fortunate enough to be supported by both the pizza community and the Las Vegas community; now it’s my turn to give back to them. In opening this pizza shop, I constantly ask myself, ‘What would grandma do?’ and grandma would always provide for and nurture those in need. I feel really lucky that I’m able to make that happen.”

The Good Menu

Good Pie will serve four distinct pizza styles: the Grandma, Detroit, Brooklyn and Rotolo’s award-winning gluten-free pizza. The pizza shop will focus on expertly crafted crusts, locally sourced produce, high-quality ingredients straight from Italy, and only traditional toppings (you won’t find chicken or pineapple here; after all, Rotolo’s grandma would not put that on pizza). Partnering with the best of the best, Good Pie’s pizzas will feature ingredients from Italy’s Caputo Flour and Ciao Tomatoes; Brooklyn’s Mike’s Hot Honey and Aiello’s Cheese; Urban Seed produce, Urbani Truffles, and NUMU Vegan Cheese. A few menu highlights include:

  • The Goods (by the slice or pie in Brooklyn and Grandma style):
    • Good cheese – sauce, mozzarella, fresh mozzarella, grana, and basil
    • Good white – mozzarella, fresh mozzarella, garlic oil, ricotta, grana, and basil
    • Good vegan – sauce, mushrooms, caramelized onion, peppers, kale, and basil
    • Good quality meat – sauce, mozzarella, fresh mozzarella, sausage, meatball, pepperoni, ham, grana, oregano
  • The Really Good Stuff (pies only in Grandma, Brooklyn, and Detroit style)
    • The good good – sauce, mozzarella, fresh mozzarella, sausage, artichoke hearts, grana, and oregano
    • That’s that good $hit – mozzarella, fresh mozzarella, porcini mushrooms, truffles, wild mushrooms, caramelized onions, truffle oil, and thyme
    • Johnny be good – sauce, mozzarella, fresh mozzarella, sausage, caramelized onions, mushrooms, fresh garlic, grana, and basil
    • The good, the rad and the gnarly – sauce, mozzarella, fresh mozzarella, sausage, jalapeno, fresh garlic, Calabrian chili, mikes hot honey, grana, and parsley

But there’s more to the menu than just pizza. Good Pie also will serve up crave-worthy Good knots – with three kinds of garlic (garlic oil, roasted garlic, and fresh garlic), grana, parsley, and sauce, and for those looking to kick it into high gear the option to add Everything bagel spice; Good balls – homemade beef and pork meatballs, sauce, grana, and parsley; and Calzone – mozzarella, fresh mozzarella, ricotta, and grana. Sweets including Fat Sal’s Cannoli and Chocolate Chip Cookies will also be available.

The Good Space

Designed in the spirit of Grandma’s kitchen, Good Pie features pictures of grandmothers of friends and colleagues throughout time while wooden spoons, pizza peels, and vintage pizza cutters warm the subway tilled space. Knick knacks – just like grandma would have – hang from above, some telling stories of Rotolo’s past, some inspiring stories to come. And while grandma watches over the room, songs by Frank Sinatra, Dean Martin, Elvis, The Beatles, and The Rolling Stones set the tone. Good Pie’s bar seats eight customers, with additional seating within Pawn Plaza.
