José Andrés to Open New Seafood Restaurant, Bazaar Mar, in Las Vegas

Legendary chef and do-gooder José Andrés is set to open his latest restaurant in Las Vegas, a seafood experience dubbed Bazaar Mar.

Set to open on Wednesday, Aug. 7, Bazaar Mar will bring a celebration of all things beachy or nautical to the desert lands of Las Vegas. Not everything on the menu will be seafood-based, but pretty much all of the dishes will nod to the restaurant’s seafaring theme.

For example, one dish dubbed Sea Anemone features a cluster of oyster mushrooms and pickled mushroom cups that are carefully arranged to suggest an oceanic origin. It is then topped with an anchovy aioli and citrus leaves.

You’ll also find a cone dish filled with both smoked and fresh trout and then combined with lemon and crème fraîche. Even the restaurant’s take on key lime pie has a beach theme, with graham crackers shaped into a sand castle and surrounded by ice cream molded into seashells.

Of course, it wouldn’t be an ode to the ocean without fresh fish on the menu. To that end, Bazaar Mar will allow guests to select a whole fish from an attached market section. This catch can then be baked, fried, grilled in a wood-fired oven, or prepared as sashimi.

If that wasn’t enough, the restaurant features a stunningly beautiful dining room and some eclectic features, such as a concept coffee shop on-site that will double as a lounge with caviar and cocktails.

You’ll find Bazaar Mar at the Shops at Crystals on the Las Vegas Strip, according to Eater Las Vegas.
