Take a Trip to Tulum at Amaya Modern Mexican in Las Vegas

A beachy Mexican restaurant dubbed Amaya Modern Mexican is set to open in the heart of the Las Vegas desert at the Cosmopolitan.

Amaya Modern Mexican will represent one of the first new major openings in Las Vegas when it debuts in January 2025, according to Eater Las Vegas. It’ll bring a thoroughly beachy and Tulum-inspired vibe to the heart of the Las Vegas Strip, and join other renowned seafood-focused restaurants, such as a Jose Andres venture at the Shops at Crystals.

The restaurant will feature a full menu encompassing what you’d expect to eat beachside while vacationing in coastal Mexico, including whole lobsters, fajita boards, and other delicious seafood options. For example, you’ll find slow-cooked birria short rib, lobster enchiladas, yuzu-spiked ceviche, and a fajita board made with Mexican-inspired duck.

On the drink menu, a slate of cocktails will bring a similarly tropical feel. Planned options include the Birds of Paradise, which will be made with mezcal or tequila, blackberry syrup, pineapple, passionfruit, and a garnish of black salt. You can also order the appropriate Desert Mirage, which packs guava, hibiscus, ginger, and serrano chili syrup with the tequila of your choice.

Amaya Modern Mexican will be located in the same space as Holstein’s, but will feature a lush and tropical refresh. The 7,200-square-foot space will feature a lounge, a bar, and a dining room all inspired by the rainforest canopies and tropical beach resorts of Mexico’s Yucatan Peninsula.
